Fred migrated to Portland, OR, USA on March 1969 with his wife, Elizabeth from the Philippines. They have two children, Erick and Melissa. Fred pursued many business ventures from being an Accountant, Real Estate Agent, Operating Adult Care Homes and Residential Care Facilities, and Insurance Sales to operating Restaurants & Food Carts.
Fred prepared and sold various food such as Hot dogs, Fresh squeezed orange juice, Mexican & Filipino food in various areas in SE & Downtown Portland. Fred has been involved with the Filipino Community, having served as President and Chairman of the Board for many years with the Filipino American Association of Portland & Vicinity, Inc.
In 2015, Fred along with his friends in the Filipino community started a restaurant called “Kuya’s Cuisine,” inside the community center, serving Filipino food which he operated and managed until October 2017. Being semi-retired and continuing his love and passion for cooking and serving others, he opened “Kuya Fred’s Cuisine” food cart in Gresham, Oregon.
In September of 2018, Fred along with close family and friends, became inspired with the idea of fundraising to help fund a newly formed Foundation called “The Calabarzon Foundation of the Pacific Northwest,” with the mission to to bring & provide free dental services, supplies, and education to rural and impoverished communities in the Philippines and Southeast Asia. This is a team of volunteers and dental professionals driven by compassion to improve the health and lives of individuals in underserved communities in Calabarzon.
